Hellman's Turkey Casserole

Every time I make a turkey dinner for Thanksgiving, Christmas, Easter…and oh yes, Christmas in July, I look for new inventive ways to repurpose the leftovers into another delicious meal.  Thank YOU SuperStore for giving me a taste of Hellman’s Turkey Casserole the other day when I stopped in to buy the HUGEST crab in the tank…that’s another story! I had a roast chicken I wanted to use up so I made this recipe with chicken and will absolutely make it again with turkey. Confession: I ate some of this for breakfast today! 🙂

Hellman's Turkey Casserole

Turkey Dinner Casserole

This is the perfect recipe from Hellman’s of what to do with leftover turkey dinner. You can also use roast chicken.

Ingredients

  • 4 cups of leftover prepared stuffing, divided
  • 4 cups coarsely chopped leftover cooked turkey (about 1 lb.)
  • 3/4 cup Hellmann’s® or Best Foods® Real Mayonnaise, divided
  • 1/4 cup whole berry cranberry sauce
  • 2 cups leftover mashed potatoes
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°C. Spray an 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups of stuffing, then top with turkey.
  2. Combine 1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise with cranberry sauce; evenly spread over turkey.
  3. Combine the remaining 1/2 cup Mayonnaise, potatoes and cheese in a large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing.
  4. Bake for 40 minutes or until heated through. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.
