Greek-ish Salad

This salad has been a big hit with my friends and family. It’s perfect for bringing to potlucks—I usually assemble it when I arrive so the lettuce doesn’t get soggy. I found this recipe on by Carol Amos and modified it slightly.

Ingredients – Dressing

3/4 cup olive oil
3 tbsp red wine vinegar
3 tbsp grated Parmesan cheese
2 tbsp lemon juice
2 tbsp crushed garlic
2 tbsp dried oregano
1 1/2 tsp dried basil
1 tsp salt, or to taste
Fresh ground pepper to taste

Ingredients – Salad

2 heads romaine lettuce, chopped
1 large cucumber, cut into matchsticks or chunks
2 red peppers, chopped
2 orange peppers, chopped
2 yellow peppers, chopped
1/2 red onion, chopped
1/2 cup Kalamata olives
1/2 cup light feta cheese, crumbled


Blend all ingredients for the dressing. It fits perfectly in a Magic Bullet. Set aside. Prepare all ingredients for the salad and place in a medium bowl. Add half the dressing and mix, add more dressing as needed, depending on preference.
